2 small apples, shredded with grater (can use 1 large apple too)
1½ cup buttermilk (can use other milks too, I just love the way buttermilk enhances pancakes)
2 large eggs
1 tsp vanilla
butter for cooking
Instructions
Mix flour, sugar, spices, salt and baking powder and soda together in a large bowl, Mix together.
Shred apples and add to flour mixture. Incorporate thoroughly.
in a separate mixing bowl or large measuring cup, mix milk, eggs and vanilla together.
Add liquid mixture to flour mixture and stir to combine. Mix until just combined. Understand this will be a lump mixture so don't worry if it doesn't look right.
Butter griddle and ladle about ¼ cup batter onto the hot griddle. Flip when the bottom starts to look solid.
Because of the apple they will look slightly different but don't worry they are still delish!
