Classic Meatloaf with Veggies

Serves: 8
- 2 Lbs ground beef (can use ground turkey too)
- ½ cup (heaping) onion, diced
- ½ Red bell pepper, diced
- 1 large Zucchini, shredded
- 2 Tbsp Tomato puree
- 1 tsp (heaping) Garlic powder ( can use fresh)
- 2 tsp Italian seasoning
- ½ cup rolled oats (for celiac disease, make sure they are Gluten free certified)
- ½ cup Chicken Broth
- Pinch Coarse Sea Salt
- Generous Amounts of Fresh Ground Pepper
- 2 eggs
- Combine all ingridents
- Place mixture on a lined or oiled baking sheet. Form into a loaf shape. Can make a bunch of many meatloaves (think meatballs) to shorten cooking time.
- Bake in 350degree oven for 50-60minutes
