Ginger Roasted Sweet Potatoes

Ingredients
  • 3 large sweet potatoes
  • 1 tsp (heaping) ground ginger (can also use fresh too)
  • 2ish Tbsp olive oil
  • Salt and pepper to taste
Instructions
  1. Peel sweet potatoes and cut into half-medallions
  2. Place the sweet potatoes on a lined or oiled baking sheet and drizzle with olive oil
  3. Sprinkle with ginger and coarse or fine sea salt (potatoes sometimes need a little help, so be generous, but not heavy handed...can you see the difference?) and generous amts fresh ground pepper
  4. Place in a 425-degree oven for 30 min (until tender) can be left for longer to increase the crunchy factor
  5. Serve hot!
  6. Enjoy!
