1 tsp (heaping) ground ginger (can also use fresh too)
2ish Tbsp olive oil
Salt and pepper to taste
Instructions
Peel sweet potatoes and cut into half-medallions
Place the sweet potatoes on a lined or oiled baking sheet and drizzle with olive oil
Sprinkle with ginger and coarse or fine sea salt (potatoes sometimes need a little help, so be generous, but not heavy handed...can you see the difference?) and generous amts fresh ground pepper
Place in a 425-degree oven for 30 min (until tender) can be left for longer to increase the crunchy factor
Serve hot!
