Cajun BlackBeans and Rice with Turkey Sausage

- 2Tbsp butter
- ½ - whole onion, finely diced (about 1 cup)
- 1 ½ish Bell peppers diced
- I used ½ large green pepper, ½ large red pepper, ½ large orange pepper
- 1 cup diced celery
- 2 Tbsp. Creole Seasoning (below)
- 3 cups cooked black beans – (~2 cans black beans)
- 2-4 cloves garlic – minced
- 1 package of link Turkey sausage cut into rounds or halves
- 4 cups chicken broth
- 2 cups water
- ½-1tsp Course Sea Salt if needed - taste first!
- 1 Cup uncooked Brown rice
- Cook Rice according to package directions – Brown rice takes 40ish minutes – so start with enough time to have
- Melt butter in large dutch oven, add onion, peppers and celery. Add Creole Seasoning. Saute about 5 min to toast spices and soften vegetables.
- Add beans, garlic, sausage, broth and water. Stir well to mix
- Bring to boil, then lower heat to simmer until ready to eat. Minimum of 30 minutes.
- (Can be cooked in crockpot too for ease on weeknight)
- Top rice with Black bean soup Mixture and Savor!
