Mexican Corn
- 1 package frozen corn
- ½ cup diced onion
- 1 bell pepper, diced
- 1 clove garlic
- 1 tsp cumin
- 1 tsp Chili Power
- Salt and pepper to taste
- 1-2Tsbp Olive Oil
- 2 Tbsp Mayonnaise
- 2 Tbsp Cilantro
- ½ Lime
- In a large skillet place diced onion and bell pepper with olive oil and spices.
- When onions and pepper are tender, add frozen corn and cook through, for about 10 minutes
- Remove the corn from the heat and toss with minced cilantro, Mayonnaise, and Lime.
