Dice Zucchini, squash and Red Bell Pepper. Place in 8x11 baking dish.
Toss with Olive oil, Salt and Pepper
Place chicken breasts ontop of the vegetables sprinkle salt and pepper. Spread about 1 tbsp hummus on each chicken breast. Then squeeze the juice of two lemons on chicken and vegetables.
Place in oven and bake for 25-35 minutes until the chicken is cooked through (165 degrees) and the vegetables are tender. Serve immediately.
