Lemony Chicken with Aspargus

Serves: 8
- 1 - 1½ lb Chicken breast, cubed
- 2-3TBsp EVOO
- 1 bunch (~1 lb) asparagus, ends- off and cut into 1ish inch pieces
- ½ cup onion, diced
- 2ish cloves of garlic
- Juice of 1 lemon (about ¼cup)
- ½ tsp Coarse Sea Salt (good pinch)
- ¼ tsp fresh Ground Pepper
- ¼cup Grated Parmesan cheese
- Toss, chicken, onion, garlic, asparagus, olive oil, salt, pepper and parm cheese in a 9x13 baking dish.
- Bake in 375 degree oven for 20-30ish minutes until asparagus is tender and chicken is cooked through
- Serve on bed of lettuce, in pita, wrapped naan bread, or over pasta or rice. I served over lettuce and it was so yummy!
