Lemony Chicken with Aspargus

Ingredients
  • 1 - 1½ lb Chicken breast, cubed
  • 2-3TBsp EVOO
  • 1 bunch (~1 lb) asparagus, ends- off and cut into 1ish inch pieces
  • ½ cup onion, diced
  • 2ish cloves of garlic
  • Juice of 1 lemon (about ¼cup)
  • ½ tsp Coarse Sea Salt (good pinch)
  • ¼ tsp fresh Ground Pepper
  • ¼cup Grated Parmesan cheese
Instructions
  1. Toss, chicken, onion, garlic, asparagus, olive oil, salt, pepper and parm cheese in a 9x13 baking dish.
  2. Bake in 375 degree oven for 20-30ish minutes until asparagus is tender and chicken is cooked through
  3. Serve on bed of lettuce, in pita, wrapped naan bread, or over pasta or rice. I served over lettuce and it was so yummy!
