Salt and Vinegar Smashed Potatoes

- 2 pounds red new potatoes (and small tators you want)
- 2-3Tsp Coarse Sea Salt (few generous pinches)
- 2 Tablespoons unsalted butter, melted
- 1 Tablespoons olive oil
- 2 cups white vinegar
- Water to boil potatoes
- Freshly ground black pepper
- Add washed potatoes to large boil pot, add white vinegar and cover with water to about 1 inch above the potatoes. Salt water with pinch of salt.
- Once potatoes are tender drain water. Toss with melted butter and oil.
- Place each potato on lined baking sheet and smash with hard utensil, like glass measuring cup
- Once all potatoes are smashed, sprinkle with salt and generous amounts of fresh ground pepper.
- Bake at 400degree for ~30mins
- Serve hot and Enjoy
- I garnished with parsley, chives would be good too.
