Method
- Add all ingredients to a food processor and blend until the mixture sticks together when pressed. This usually takes about 1-2 minutes, scraping down the sides as needed.
- Using your hands or a small cookie scoop, roll the mixture into 1-inch balls. Place on a parchment-lined plate or baking sheet.
- Refrigerate for 20-30 minutes to set.
- Optional: Roll the chilled truffles in extra cocoa powder or finely crushed hazelnuts for a beautiful finish.
Notes
Like it sweeter? Add one Medjool date to the food processor along with the other ingredients, or increase the maple syrup by an additional tablespoon.
Texture tip: If the mixture isn't holding together, add a bit more maple syrup or coconut oil, one teaspoon at a time. If it's too wet, add more cocoa powder or hazelnuts.
