Chocolate Hazelnut Truffles

Healthy chocolate hazelnut truffles made with roasted hazelnuts, cocoa powder, and maple syrup. Naturally sweet, gluten-free, and perfect for holiday gifting or snacking.

Ingredients
  

  • 135 g roasted hazelnuts filberts
  • 3 tbsp 18 g cocoa powder
  • ¼ tsp 1.5 g fine sea salt
  • 2 tbsp 40 g maple syrup
  • 1 tbsp 13.6 g coconut oil
  • ½ tsp 2.1 g vanilla extract
  • Optional: Medjool Dates

Method
 

  1. Add all ingredients to a food processor and blend until the mixture sticks together when pressed. This usually takes about 1-2 minutes, scraping down the sides as needed.
  2. Using your hands or a small cookie scoop, roll the mixture into 1-inch balls. Place on a parchment-lined plate or baking sheet.
  3. Refrigerate for 20-30 minutes to set.
  4. Optional: Roll the chilled truffles in extra cocoa powder or finely crushed hazelnuts for a beautiful finish.

Notes

Like it sweeter? Add one Medjool date to the food processor along with the other ingredients, or increase the maple syrup by an additional tablespoon.
Texture tip: If the mixture isn't holding together, add a bit more maple syrup or coconut oil, one teaspoon at a time. If it's too wet, add more cocoa powder or hazelnuts.
