Ginger Roasted Sweet Potatoes

Ingredients
  

  • 3 large sweet potatoes
  • 1 heaping teaspoon ground ginger fresh ginger works great here too!
  • 2 tablespoons olive oil eyeball it
  • Coarse or fine sea salt to taste (be generous)
  • Fresh ground black pepper to taste (also generous)

Method
 

  1. Preheat your oven to 425 degrees.
  2. Peel the sweet potatoes and cut them into half-medallions.
  3. Spread them out on a lined or lightly oiled baking sheet.
  4. Drizzle with olive oil, then sprinkle with ginger, salt, and a generous amount of fresh ground pepper.
  5. Roast for 30 minutes, or until tender. Leave them in a few extra minutes if you want crispier edges.
  6. Serve hot and enjoy every last caramelized bite!
