Lentil Chili

Ingredients
  

  • 1 bag dry lentils
  • 1 cup onion diced
  • 4 cloves garlic minced
  • 1 cup diced bell peppers any colors you like
  • 1/2 cup celery diced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon sea salt heaping
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon fresh oregano minced
  • 4 cups vegetable broth
  • 1 can tomato sauce

Method
 

  1. Add lentils, onion, garlic, bell peppers, and celery to a large crockpot.
  2. Sprinkle in cumin, coriander, chili powder, ginger, salt, and pepper.
  3. Pour in vegetable broth and tomato sauce. Add oregano whenever you remember to. Stir everything together until well combined.
  4. Cook on high for about 6 hours or on low for 8 to 12 hours, until lentils are tender but not mushy.
  5. If the chili becomes too thick, add a bit more water or broth until it reaches your desired consistency.
  6. Serve warm and enjoy.
