Method
- Line an 8×8-inch dish with parchment, leaving overhang.
- Melt chocolate chips and coconut milk over low heat, stirring often.
- Remove from heat and stir in maple syrup and peppermint extract.
- Spread into the dish and top with crushed peppermint.
- Chill at least 2 hours or until firm.
- Lift out with parchment and slice into squares.
