Method
- Pierce squash several times with a fork and microwave 5–6 minutes.
- Cut in half, remove seeds, and drizzle with olive oil.
- Place face-down on a parchment-lined baking sheet and roast at 425°F for 10–12 minutes.
- Scrape strands with a fork into a bowl. Add garlic, Parmesan, parsley, salt, and pepper.
- Toss and serve warm.
