Spiced Pear and Raisin Chicken

The Pear and Raisins give this dish a wonderful mix of sweet and savory!

Ingredients
  

  • 1 1/2 lb diced chicken breast or skinless boneless chicken thighs if desired,
  • 1 Cup California Raisins
  • 2 Tbsp Olive oil
  • 1 Anjou Pear diced
  • 1/2 cup onion diced
  • 2 cloves garlic diced
  • Salt and pepper to taste.
  • 1/2 cup yellow bell pepper diced
  • 1 tsp paprika
  • 1/2 tsp ginger
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp Red pepper flakes more or less depending on preference
  • 1 cup chicken broth

Method
 

  1. Add olive oil, onion, bell pepper pear, raisins, garlic and spices to hot skillet. Stir to combine and cook for about 5-10min on medium to saute.
  2. Add Diced chicken and stir to brown/cook. Add chicken broth. Allow to chicken to cook completely.
  3. Can be served over brown rice.
  4. Enjoy!
