Ingredients
  

  • 2 eggs
  • 1 teaspoon coconut oil
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon black pepper
  • 1 cup spinach kale, or arugula
  • 2 oz smoked salmon
  • Salt to taste
  • Optional: a squeeze of lemon or a sprinkle of red pepper flakes

Instructions
 

  • Heat coconut oil in a pan over medium heat.
  • Whisk the eggs with turmeric ,salt and black pepper, then pour them into the pan.
  • Stir gently and toss in the greens, allowing them to wilt slightly.
  • Once eggs are cooked to your liking, plate them and top with smoked salmon.
  • Add a squeeze of lemon or extra seasoning for a flavor boost.
