Lemony Chicken with Asparagus

Ingredients
  

  • 1 to 1½ lb chicken breast cut into 1-inch cubes
  • 2 –3 Tbsp extra virgin olive oil
  • 1 bunch asparagus about 1 lb, tough ends removed and cut into 1-inch pieces
  • ½ cup onion diced
  • 2 cloves garlic minced
  • Juice of 1 lemon about ¼ cup
  • ½ tsp coarse sea salt a good pinch
  • ¼ tsp freshly ground black pepper
  • ¼ cup grated Parmesan cheese

Method
 

  1. Preheat your oven to 375 degrees.
  2. Cut the tough ends off the asparagus, then slice into 1 to 1½-inch pieces.
  3. Cube the chicken breast into roughly 1-inch pieces for even cooking.
  4. Add the chicken, asparagus, onion, and garlic to a 9×13 baking dish.
  5. Drizzle with olive oil, then add lemon juice, salt, pepper, and Parmesan cheese.
  6. Toss everything thoroughly so it’s evenly coated.
  7. Bake for 20 to 30 minutes, tossing halfway through, until the asparagus is tender and the chicken is cooked through.
