Lemony Chicken with Asparagus (No Skewers Required)

I originally saw a beautiful chicken-and-asparagus kebab recipe floating around Pinterest and immediately thought, Yum. And then, about two seconds later, absolutely not. 😅

Skewering chicken and veggies sounds lovely in theory, but on a busy weeknight, nope, thats not for me!  So I took a shortcut, tossed everything together in one baking dish, popped it in the oven, and honestly… it turned out even better than expected.

This lemony chicken and asparagus bake is one of those recipes that checks all my favorite boxes: easy, nourishing, family-friendly, and flexible. You can serve it over salad, stuff it into a pita, pile it on pasta, or eat it straight from the pan while standing at the counter. No judgment here.

Why I Love This Meal (Beyond the Taste)

As a dietitian, I’m always thinking about how meals come together nutritionally, not in a restrictive way, but in a does this actually support my body way. And this one really does.

Lemony Chicken with Asparagus

Ingredients
  

  • 1 to 1½ lb chicken breast cut into 1-inch cubes
  • 2 –3 Tbsp extra virgin olive oil
  • 1 bunch asparagus about 1 lb, tough ends removed and cut into 1-inch pieces
  • ½ cup onion diced
  • 2 cloves garlic minced
  • Juice of 1 lemon about ¼ cup
  • ½ tsp coarse sea salt a good pinch
  • ¼ tsp freshly ground black pepper
  • ¼ cup grated Parmesan cheese

Method
 

  1. Preheat your oven to 375 degrees.
  2. Cut the tough ends off the asparagus, then slice into 1 to 1½-inch pieces.
  3. Cube the chicken breast into roughly 1-inch pieces for even cooking.
  4. Add the chicken, asparagus, onion, and garlic to a 9×13 baking dish.
  5. Drizzle with olive oil, then add lemon juice, salt, pepper, and Parmesan cheese.
  6. Toss everything thoroughly so it’s evenly coated.
  7. Bake for 20 to 30 minutes, tossing halfway through, until the asparagus is tender and the chicken is cooked through.
