Anytime Chicken (made in the crockpot)

Ok, this is the first of my Super Awesome Kitchen Tips series.

In these little posts, I will bring you some super awesome and hopefully really helpful kitchen tips to make your life easier, lessen your kitchen time, minimize your headaches and give you more time to be a super awesome rockstar in your other pursuits. 🙂

Super Awesome Kitchen tips

Here we go, Super Awesome Kitchen Tip number 1…You know those nights when you need to make dinner (or lunch) like 10minutes ago, so you are searching your kitchen for = something super quick, easy, but you also want it to be healthy?  You know,  that if only you had something, ready-to-eat already shredded frozen chicken in the freezer, you could whip something up on pronto that was all three (quick, easy, and healthy).

Well then, I’ve got the best Super Awesome Kitchen tip for you!  This will change your life for-ever!

I really can’t take credit for this amazing time-saving tip, my friend Kim enlightened to this new way of life.  Kim, invited us over to dinner one evening and she made this amazing shredded chicken pasta dish…when I was asking her about the recipe she gave me this great time-saving tip and here I am sharing it with you!

 

Anytime chicken

Ok, first.  I get out my extra big crockpot (affiliate link) and fill it to the brim with frozen chicken breasts (this is about 5lbs).  I use frozen chicken breast because they are less expensive, I can buy in bulk and the extra moisture makes it so I don’t have to add any broth or water and the chicken cooks evenly.

Then I sprinkle the chicken with some Sea Salt, fresh ground pepper and garlic powder (these are optional, you can cook them without the spices, but am of the opinion, the more spices the better), put the lid on and cook on low for 8+hours or High for 4+hours.  Don’t worry about over cooking it, I have left it on for 12ish hours and it was fine.

So just toss everything into the crockpot in the morning and it’s ready when you get home from work.

Use what you want that night. I use it in soups like chicken noodle soup or chicken tortilla soup, in Chicken Ceaser Pitas, Chicken Salad sandwiches, Chicken wraps, chicken and rice bowls  and even in Pasta dishes.  It’s so versatile!

And freeze the rest for next time, I used mason jars because they are easy to thaw and can be used over and over again, but if don’t have mason jars, you can freeze in a plastic freezer bag. This chicken can last up to 6months in the freezer.
