Broccoli Bacon Quiche

When you think of Quiche do you think difficult and complicated?  If the answer is yes, then this is the post for you!  Quiche is actually a easy, healthy and super simple addition to your menu and you will feel super fancy when add Quiche to your regular meal plan.  If I am being honest, I do a lot of things just because they make me feel fancy 🙂

This is a great weeknight meal, it’s quick, easy and budget friendly. This recipe makes 2 quiches, if don’t eat both, these freeze really well.

I use frozen broccoli because its very budget friendly and I always have it in my freezer.  Also, you can make your own pie crust, but for this I choose to use pre made ones.  I like to work with my strengths…and pie crust making is not one of them.

I promise this just happened…I only moved the onions a little. This is the way I feel about this quiche! Melt the butter and add the onions, salt and pepper.

Saute onions until tender. 3-5mins.

Add diced turkey bacon and cook until a little crispy, 5-7 minutes.  Feel free to leave this out is you want to make this a meatless meal.

Add Frozen broccoli.

Add Chicken broth and stir well to combine. Cook on low-med heat until broccoli is tender and liquid cooks down.  Careful not to scorch.

Combine Eggs and milk.  Beat with wire whisk until combined. Set aside

Sprinkle 1/2 cup of cheese into each pie crust.

Layer the broccoli and bacon mixture over the cheese.

Pour ~1cup of egg mixture over broccoli mixture.  Use all the egg mixture.

Put into a 375degree oven and cook for 30-40minutes, until cooked all the way through (shake it a little to make sure it is solid throughout)

Broccoli and Bacon Quiche

Ingredients
  • 2 Deep Dish Pie Crusts
  • ½cup onion, diced
  • 2Tbsp butter
  • 6 pieces Turkey bacon
  • 3-4 cups of frozen broccoli florets (can use fresh too)
  • ½ cup Chicken or Vegetable broth
  • 8 large eggs
  • 1 cup of cheddar cheese (other cheeses are good too; swiss, mozzarella...etc)
  • 1 cup 2% milk (whatever milk you like)
  • 1 tsp Coarse Sea Salt
  • ½ tsp Fresh Ground pepper (be generous with this, it makes it yummier)
Instructions
  1. Preheat the Oven to 375 degrees
  2. Melt butter, add onion, salt and pepper. Saute until soft
  3. Add diced turkey bacon. Cook until slightly crispy.
  4. Add broccoli and Broth. Cook on low-medium heat until Broccoli is tender and liquid cooks down
  5. In separate bowl combine eggs and milk. Whisk until well mixed. Set aside.
  6. Sprinkle ½ cup cheese in each of the pie crusts
  7. Spread the broccoli and bacon mixture evenly in each pie crust
  8. Pour the egg mixture over the broccoli mixture. Distribute evenly between the two pies
  9. Bake at 375 for 30-40mintues or until solid throughout (give them a little shake, shake to make sure)
  10. Slice like a pie and Enjoy!
