I love the fall! And one of the reasons I love the fall is because with the cooler weather I can start making soups and stews again! I live in Texas and because we are now having come cool 80 degree days, its time to start breaking out my fav soup recipes! Chicken tortilla soup has long been one of my favorite soups. It’s so easy too, just throw everything into your pot and turn it on! Because I was limited on time this day, I used the crockpot to cook this soup, but you can easily just make it in a dutch oven or other large pot in as little as 30 min (as with most soups, the longer it cooks, the more flavorful it will be).
Place 2 large chicken breast in the crockpot, add cumin, coriander, onion, garlic, fresh oregano, lime juice and salt/pepper.
Then I added frozen corn, black beans and about 5 cups of chicken broth
I added the green chilies and cilantro after I added the broth only because I forgot to add it in the beginning 🙂
Let it cook for the whole day or 4 hours at least (in the crockpot), before you eat, remove the chicken and “cube” and add it back in. And Voila, dinner is served!
Ok, so I know this is Tortilla soup, but don’t get carried away with adding tortilla chips to it, this will defeat the purpose of making it healthy :). I added about 1/2 an avocado, crunched up just a few chips for some added texture and a little bit of cheese. Also, I made some brown rice to add to the kid’s soup, I have found it hard for them to eat and enjoy a meal when it’s real soupy. 🙂

- 1-1.5 lb of chicken breast
- 1 cup onion, diced
- 4-6 cloves of garlic, minced
- 1.5 tsp cumin
- 1.5 tsp coriander
- 1tsp salt
- ½ tsp fresh ground pepper
- ¼ cup lime juice
- ½ cup cilantro, minced
- 2Tbsp oregano minced (2 Tsp dried oregano)
- 2 small cans of green chilies (I actually had some hatch green chilies in my freezer so I used those)
- 2 cans black beans, drained (I use my frozen black beans)
- ½cup frozen corn
- 5 cups of Chicken broth
- Toss all the ingredients into a crockpot and stir to combine. Cook on high for min of 4 hours and low for min of 6 hours.
- You can also cook this yummy soup in a large pot or dutch oven. It can be ready in as little at 30 min. The longer soup cooks the more flavorful it will be!
