Chicken Verde (Crockpot Style)

Ok, ready for something so easy, so simple, so delicious, it will blow your mind? Well, then here you go! This crockpot Chicken Verde recipe has literally 5 steps, cook time and you are done!   (well, only 5 steps if you already have your onions pre-chopped…and if you aren’t pre-chopping your onions, you should! Here is why. )

I am even using frozen chicken breast…crazy easy right?!  I love this meal for a weeknight I can put all the ingredients into the crockpot in the morning, turn it on and it’s done at dinner time!

Place 4 frozen chicken breasts (that’s right, still frozen, how easy is that?!) in a large crockpot and top with cumin, a dash of salt and some diced onions.

Pour about 1 cup of store- bought or homemade Verde sauce on top.

**I had some questions about what exactly Verde Sauce was…here is the brand I use and the ingredients off the back.  It basically a salsa made with tomatillos, chilis, cilantro and salt. I hope you can find it in your stores, its delicious and versatile stuff!**

Cover and cook in the crockpot for on high for 4-6hours or low for 6-8ish hours.

Take 2 forks and shred chicken.  This will be really easy, the chicken will just come apart!

You can have this over rice, roasted cauliflower, quinoa, put in enchiladas, or served in tacos, like we did ↓

Ingredients
  • 4 chicken breasts
  • 1 cup diced onions
  • 1Tsp Cumin
  • Dash of Course Sea Salt
  • 1 Cup Verde Sauce - homemade or store bought
Instructions
  1. Place chicken breasts in a large crockpot
  2. Add cumin, onions and dash of salt.
  3. Pour Verde Sauce on top
  4. Cover and cook for 4-6hours on low and 6-8ish hours on high
  5. Shred with 2 forks
  6. Can be served over rice/couscous/quinoa/roasted cauliflower, put in enchiladas, or eaten in tacos - my preferred method
