I’m getting traditional up in here! I gotta tell ya’, I enjoy meatloaf now and then. There is just something so comforting and homey about good old fashion meatloaf, right? And my kids love it too, and I will keep providing my little cherubs with meatloaf until they start asking like this…

So in this recipe, I am taking a pretty standard meatloaf recipe and giving it a boost of color, texture and nutrition by adding some cut-up and shredded veggies.

I am taking 2 lbs of ground beef (you can also use ground turkey), eggs, onion, zucchini, red bell peppers, tomato paste and some spices.
Add about 1/2cup rolled oats for Gluten free recipe ( can use bread crumbs if you aren’t enjoying a gluten free lifestyle).
Then I add 1/2cupish of chicken broth. I think this makes it taste better than milk(traditional ingredient)

Mix this well with your hand or a spoon…until you get this ↓
Then place on a lined or oiled baking sheet and mold into a loaf shape.
**Time-saving tip: If you are pressed for time, you can form into a bunch of little meat loaves (similar to meatballs), so they cook more quickly.
So pretty! Pop it a 350degree oven for 50-60minutes, until no longer pink in the middle.

- 2 Lbs ground beef (can use ground turkey too)
- ½ cup (heaping) onion, diced
- ½ Red bell
pepper, diced - 1 large Zucchini, shredded
- 2 Tbsp Tomato puree
- 1 tsp (heaping) Garlic powder ( can use fresh)
- 2 tsp Italian seasoning
- ½ cup rolled oats (for celiac disease, make sure they are Gluten free certified)
- ½ cup Chicken Broth
- Pinch Coarse Sea Salt
- Generous Amounts of Fresh Ground Pepper
- 2 eggs
- Combine all
ingridents - Place mixture on a lined or oiled baking sheet. Form into a loaf shape. Can make a bunch of many meatloaves (think meatballs) to shorten cooking time.
- Bake in 350degree oven for 50-60minutes
- Enjoy!
