This is one of my favorite weeknight meals! It is super quick from stove top to oven to the table, but because you bake it for 10-15mins at the end, it justs feels a little bit more fancy…and you know how I love to feel fancy 😉

Easy Baked Penne Pasta

Ingredients
- 1 16oz package of penne pasta (or whatever pasta you like)
- 2 tablespoons olive oil
- 1 pound ground beef (you can use turkey too)
- 1 cup
onion, diced - 2 cloves garlic, minced
- ¼ teaspoon freshly ground pepper
- Pinch of salt
- 1 can (28 ounces) diced tomatoes
- 2 tsp Italian seasoning
- 8 ounces coarsely grated mozzarella cheese
Instructions
- Cook Pasta according to package, to just before Al dente (will cook more in the oven) and drain when done.
- In a large skillet, add olive oil, onions, ground beef and garlic. Cook until meat is thoroughly cooked through. Drain and rinse meat (if using beef)
- Place the rinsed beef back into the skillet. Put
in the dicedTomatoes, and Italian seasoning. - Grease a 9X13 baking dish, place pasta and mix in tomato sauce.
- Sprinkle with cheese and cover with foil.
- Bake on 400 degrees for 15min, until
cheese gets melty.
