Easy Baked Penne Pasta

This is one of my favorite weeknight meals!  It is super quick from stove top to oven to the table, but because you bake it for 10-15mins at the end, it justs feels a little bit more fancy…and you know how I love to feel fancy 😉

Easy Baked Penne Pasta

Ingredients
  • 1 16oz package of penne pasta (or whatever pasta you like)
  • 2 tablespoons olive oil
  • 1 pound ground beef (you can use turkey too)
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • ¼ teaspoon freshly ground pepper
  • Pinch of salt
  • 1 can (28 ounces) diced tomatoes
  • 2 tsp Italian seasoning
  • 8 ounces coarsely grated mozzarella cheese
Instructions
  1. Cook Pasta according to package, to just before Al dente (will cook more in the oven) and drain when done.
  2. In a large skillet, add olive oil, onions, ground beef and garlic. Cook until meat is thoroughly cooked through. Drain and rinse meat (if using beef)
  3. Place the rinsed beef back into the skillet. Put in the diced Tomatoes, and Italian seasoning.
  4. Grease a 9X13 baking dish, place pasta and mix in tomato sauce.
  5. Sprinkle with cheese and cover with foil.
  6. Bake on 400 degrees for 15min, until cheese gets melty.
