Homemade Taco Soup

Taco Soup is one of the first meals I cooked all on my own.  It is so delicious and really easy to prepare, just toss everything into a crockpot, turn it on and it is done in a few hours.  The only problem is that Taco soup is typically made with premade season mixes, which can be full of preservatives and additives.  I have missed this delicious and easy soup, so I decided to so a little research and by  mixing a homemade ranch dressing mix I found here, and a homemade taco season mix found here, for the perfect combo of flavors.  I hope you enjoy it!

I gathered all my spices and mixed them into Ranch Dressing mix and a Taco Seasoning Mix, so I could taste them individually, to make sure they were what I am looking for.  They were perfect, so to keep things easy for you, I just combined the spice mix into a Ranchy Taco Seasoning Mix (name is a work in progress 😉 )

I don’t use very many canned beans because again all the additives and stuff in the, but I wanted to make this as simple and as close to the traditional taco soup recipe as possible. So I used organic canned beans, they are more expensive, but I think they are worth the money.

Choose 4-5 of your favorite beans, I used garbanzo, Kidney, Pinto and Navy Beans ( I thought I have also used black bean in the recipe, but they can I purchased disappeared, weird). I also added corn for color and texture, use canned or frozen.  My mom use to use Hominy, which is a great addition and may do next time.

Brown 1 lb of ground beef.

Throw this all together in a large crockpot + 1 large diced Zucchini for extra nutrients.

Add 2 cups of Chicken broth and 2 cups of water.

Thoroughly mix and cook in the Crockpot on low for 6-8 hours or on high for 4-6 hours.  My kiddos loved it and I was happy to share with them a favorite from my youth (well teens into my twenties 🙂 )

Ingredients
  • 1 lb (454grams) ground beef
  • 4-5cans of your favorite beans (my favs are garbanzo, kidney, pinto, black and navy beans); organic if possible
  • 1 cup corn or hominy (frozen or canned); organic if possible
  • 2 cups chicken broth
  • 2 cups water
  • 1 large zucchini, diced (optional)
  • Ranchy Taco Seasoning:
  • 1tsp dried parsley
  • 1 tsp dill
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1.5 tsp coarse sea salt
  • 1 tsp paprika
  • 2 tsp chili powder
  • 2 tsp cumin
  • 2 tsp coriander
  • 2 tsp oregano
  • 1 tsp fresh ground pepper (eye ball this, its hard to measure)
Instructions
  1. Add all the ground beef, beans, corn and zucchini into a large crockpot
  2. Add Ranchy Taco seasoning mix
  3. Pour in chicken broth and water. Mix throughly
  4. Cook on low for 6-8hours or on high for 4-6hours
  5. Enjoy!
