Homestyle Red Beans and Rice (crockpot recipe)

This is one of my family’s favorite meals!

It is healthy, delicious and makes a ton, so you can freeze what is left over for another time or you can share it with a friend or neighbor!

In fact, it is so easy, I made it live on Facebook at 6am,  last week!

Homestyle Red Beans and Rice (crockpot recipe)

Ingredients
  • 1cup onions, diced
  • 1 bell pepper, diced
  • 1 cup celery, sliced (about 2 stalks)
  • 1 lb dried kidney beans
  • 4 cups water
  • 2 cups chicken broth (or vegetable broth for vegetarian/vegen)
  • 1tsp Cayenne pepper
  • 1tsp white pepper
  • 2 tsp paprika
  • 1tsp Thyme
  • 2 tbsp fresh oregano (1.5 tsp dried)
  • 2 Tbsp fresh parsley (1.5 tsp dried)
  • 2 Bay leaves
  • 2 tsp Sea Salt (Himalayan prefered)
  • Generous abouts of black pepper
  • ¼cup Olive Oil
  • 1 lb smoked turkey sausage (if desired)
  • 1 cup white or brown rice
Instructions
  1. Soak dried beans in water over night.
  2. Toss everything (EXCEPT SAUSAGE) into a large crockpot and stir around to combine well.
  3. Cook for 8ish hours on low or 4-6hours on high, until beans are tender
  4. Add sausage about 30minutes or so before serving
  5. Cook rice according to package
