Lemon Garlic Salmon with Cream Dill Sauce

Ok, I have a confession to make…I don’t really like Salmon (*wince).   Well, that was before I found this fantastic and simple recipe over at Cooking Classing (great website btw, you have to check it out!).  Salmon is super healthy,  it’s high in protein, Omega 3, Vitamins D, B12, B3 and B6 and selenium. So, like I said I was never a huge fan of Salmon, mainly because it can have a strong fishy flavor, but this recipe has changed that!

And not only is it absolutely delicious, it is super simple and ready in a mere 12 minutes!

For this, I used a wild caught Sockeye Salmon.  It’s more expensive, but worth it in taste and nutrient content (it’s higher in Zinc, Potassium, Calcium  and Iron.)  And look at that amazing color!

I cut my salmon fillet into serving size pieces (~3oz or ~91grams), then placed them on parchment paper lined baking dish (I used glass, no real reason just seemed right.) Then drizzled with olive oil, coarse Sea Salt, fresh ground pepper, lots o’ garlic and Lemon juice. And place in 400-degree oven, for 10-12minutes. Be sure to set a time, this time goes by really fast!

While the Salmon is baking, make your Creamy Dill Sauce. In a small bowl mix together yogurt, mayonnaise, garlic (yes more! 😉 ) dill, honey, course sea salt and fresh ground pepper. Work quickly because the salmon will be done in a jiffy!

The Salmon will be deliciously fragrant and fork flaky (meaning, the flakes easily separate when you stick a fork in a give a gentle twist)

Top with the creamy dill sauce and enjoy! Don’t forget your veggies on the side.  Roasted Asparagus goes great with this Salmon!

Ingredients
  • 1 lb Salmon (454grams) - I used Wild Sockeye Salmon
  • 3-4cloves of garlic Minced
  • 2Tbsp Lemon Juice or juice from 1 lemon
  • 1-2 Tbsp Extra Virgin Olive Oil
  • Pinch of Coarse Sea Salt
  • Fresh ground Pepper - generous if you like pepper
  • Creamy Dill Sauce:
  • ⅓ cup Yogurt
  • 3Tbsp Mayonnaise
  • 1 small clove of garlic, finely minced
  • 1 tsp (heaping) dried Dill
  • 1 tsp Honey
  • Coarse Sea Salt (small pinch)
  • Fresh Ground Pepper
Instructions
  1. Place Salmon on a lined baking dish. Season with Salt and pepper, gently arrange the mince garlic on the top of the salmon, drizzle with olive oil and lemon juice.
  2. Place in 400 degree oven and bake for 10-12minutes or until fork flaky.
  3. While the salmon is baking, quickly prepare the cream dill sauce.
  4. In a small bowl, combine yogurt, mayo, garlic, dill, honey and salt and pepper.
  5. Drizzle your cooked Salmon with dill sauce and Enjoy!
