One of my favorite things in life is Pad Thai, it is the perfect combination of some of my most favorite flavors…lime, peanuts, cilantro and spicy. Delicious! So when I came across this One Pot Thai Peanut Pasta recipe, my interest was peaked because it has all the ingredients of an easy Pad Thai recipe. 🙂 So with a few modifications, we had a very yummy and super easy meal that my crew loved!
In one large pot with add all the ingredients olive oil, onion, garlic, pasta, edamame, peanut butter, bell pepper, fresh grated ginger, fish sauce, los sodium soy sauce, rice vinegar, pasta and sriracha sauce. P.s 1 heaping tsp of sriracha sauce is a very conservative amount, I limited it so it wouldn’t be too hot for the kids, but I will add more next time and definitely added some at the table because I like it SPICY! 😉
Add 4 1/4 cup of vegetable broth and stir to make sure everything is combined well. The peanut butter will melt when the liquid starts to heat up. Cook on medium heat and stir occasionally to make it is not sticking to the bottom and the pasta is cooking evenly. You can add more liquid if needed.
If you like a saucier Pad Thai cook with lid on to keep the liquid from cooking down
Once the pasta is al dente, remove from heat and add juice from 2 lime…
and toss with fresh chopped cilantro.

I made this meatless, but adding shrimp, chicken, or tofu would be delicious too! You can also add more vegetables like bean sprouts, carrots, or green onions.
- 4¼ cup vegetable broth (chicken broth works too)
- 2 tbsp olive oil
- 12oz Linguine pasta
- 4 cloves garlic
- 1tsp ginger (fresh grated)
- 1 sliced bell pepper
- 1 cup onion, diced
- 1 cup frozen edamame
- 2 TBsp crunchy peanut butter
- 1 tbsp low sodium soy sauce
- 1 Tbsp Fish sauce
- 1 Tbsp Rice vinegar
- 1 heaping tsp Sriracha sauce (very conservative, if you like it spicy add more!)
- For Adding after cooked:
- 2 limes
- 1 cup cilantro
- Chopped Roasted peanuts, for garnishing top
- Add all ingredients into a large pot and stir to combine well.
- Cook on medium heat, stirring frequently to make sure it doesn't stick to the bottom. Can cook with lid on for a saucier Pad Thai.
- When the pasta is al dente, add juice from 2 limes and toss with fresh cilantro. If desired serve with a topping of chopped peanuts.
