Roasted Aspargus

Roasting asparagus is one probably the easiest and most delicious way to prepare asparagus. I always love to have asparagus as a side vegetable dish because it just feels kinda fancy, and I am all about fancy! 😉

I kept this recipe very simple and fresh, but you can add many different spices, cheeses and additives to make it your own and flow wonderfully with your meal.

First thing’s first, when preparing asparagus, don’t just cut the ends off.  because you will end up with hard tough asparagus. A trick is to take hold of both ends of the stock and bend it until the non-flowered part of the stock snaps off.  It will naturally break where it becomes less fibrous and tough, leaving you with the best, most edible part. 🙂 I learned this trick, after years of  just tolerating tough ended asparagus!  Who knew!  Next time I get asparagus I will take a picture of this process to share with you 🙂

Place prepared asparagus on a lined baking sheet and toss with Olive oil, course sea salt, fresh ground pepper and 1-2cloves of minced garlic.

Arrange in a single layer on the baking sheet and roast in the 400-degree oven for 15-20minutes or until tender.

Serve and enjoy!

Make these littles beauties your own by adding  lemon juice or sprinkling with parmesan or blue cheese or tossing with cooked bacon pieces…the variations are endless,  they are so versatile!

Ingredients
  • 1 bunch asparagus
  • 2Tbsp Olive oil
  • 1-2cloves of garlic minced
  • Pinch of coarse Sea Salt
  • Fresh Ground pepper
Instructions
  1. Break the ends of the asparagus (more detail above in post)
  2. Place on a lined baking sheet and toss with Olive oil, minced garlic, sea salt and ground pepper
  3. Bake at 400 degree for 15-20minutes or until tender.
