Salt and Vinegar Smashed Potatoes

I Love me some  Salt and Vinegar chips, they are probably my fav indulgent food!  Thinking about them literally makes my mouth water.  Actually, I love anything vinegary or brined or cured…I love that pungent tang.  So when I can across this recipe on Pinterest, I just had to try it, and wasn’t disappointed! I made a few preparation method changes, but overall keep most of the ingredients the same.  Such a yummy combo!!

I used red new potatoes, but your can use any type of small potato you want.  As always, please wash you tators thoroughly, then put them in a large pot add 2 cups of white vinegar and then enough water cover the potatoes by 1 inch.  Boil until potatoes are tender

When the potatoes are tender, toss with 2 Tbsp of butter and 1 Tbsp Olive Oil.  Gently toss to make sure they are thoroughly coated.

Place each potato  on a lined baking sheet and take something hard, I used a glass measuring cup, and firmly press down to smash the potato to about 1/4 – 1/2 inch thick.

Once you have done that to all the potatoes, sprinkle with a few pinches of course sea salt and generous amount of fresh ground pepper.  (to taste).

Bake at 400 degrees for about 30 minutes until they are browned.  The original recipe says to turn them halfway through cooking, but I feel like this is an extra unnecessary step…when I did that it takes time, effort and they are only slightly crispier and maybe a little drier 🙂

Serve hot and enjoy!  I served them with garlic baked cod and brussels sprouts…so yummy!

Ingredients
  • 2 pounds red new potatoes (and small tators you want)
  • 2-3Tsp Coarse Sea Salt (few generous pinches)
  • 2 Tablespoons unsalted butter, melted
  • 1 Tablespoons olive oil
  • 2 cups white vinegar
  • Water to boil potatoes
  • Freshly ground black pepper
Instructions
  1. Add washed potatoes to large boil pot, add white vinegar and cover with water to about 1 inch above the potatoes. Salt water with pinch of salt.
  2. Once potatoes are tender drain water. Toss with melted butter and oil.
  3. Place each potato on lined baking sheet and smash with hard utensil, like glass measuring cup
  4. Once all potatoes are smashed, sprinkle with salt and generous amounts of fresh ground pepper.
  5. Bake at 400degree for ~30mins
  6. Serve hot and Enjoy
  7. I garnished with parsley, chives would be good too.
