Simply Delicious Baked Chicken

Baked chicken can be a super quick, delicious and versatile.  It’s also a great of protein.  Only problem I have with chicken, is that it can  be a little bland and can easily become dry and tough if you over cook it, even for just a few minutes.  But this recipes is my pretty basic but yummy rendition of baked chicken.  I use this chopped up on a salad, in baked pasta dishes, or even alone with a side of veggies.

I place my raw chicken breasts in a prepared (oiled) baking dish, splash a little olive oil on the chicken breasts, you can spread it around with your fingers if you don’t mind touching raw chicken breasts (don’t scoff this is a thing for a lot of people) .  Next, sprinkle both sides with coarse sea salt, ground pepper, Italian seasoning, and paprika.

Then top with fresh minced garlic and diced onion.  Place in the oven and bake at 375degrees for about 20minutes, until an internal temp of 165degree.  You can also test the chicken’s doneness by pressing it with your finger, if  “presses down”, then bounces back, it’s done.  Or (and real chefs are going to cringe) you can take a knife and cut into it to see if it’s done, I have been known to do this often if I am unsure…I am not too proud!

I have to admit to a fear of undercooked chicken, so I sometimes overcook it, and hate always the results (blah, dry and tough chicken). So Definitely check the chicken around 20mins, hopefully it will be done.

Enjoy!  Like I said this can be served with a salad, pasta, roasted vegetable.  It’s so versatile and can go with everything!

Ingredients
  • 1 lb chicken breast
  • 2-3Tbsp Olive oil
  • 2tsp Paprika
  • 2Tbsp Italian seasoning
  • Pinch of Course Sea Salt for each chicken breast
  • Generous fresh ground pepper
  • ½ cup diced onions
  • 3-4 cloves of garlic minced
Instructions
  1. Place the chicken breasts in a prepared baking dish. Splash with olive oil, try to make sure they are well coated.
  2. Sprinkle both sides with salt, pepper, paprika and Italian seasoning
  3. Bake at 375 for 20minutes, until internal temp of 165 degrees. You can also tell it is done because it will push down then bounce back with you press it.
  4. Enjoy!
