There is something so homey and comforting about Smothered Pork chops. I remember having them often as a kid, my parents always prepared something a little “nicer” Sunday evening meal. But just because it is a little fancy, don’t mean it is complicated or difficult, these really are very simple, delicious! This time I served these over a bed of pasta, but they are also delicious with rice or mash potatoes and of course a side salad or other veggie.
And if you don’t like or eat pork you can use this same recipe for chicken breast too. Delish!
Ok, First I…
Add about 2 Tbsp to olive oil to a hot pan, tossed in 1 cup diced onions, pinch of salt and fresh ground pepper.
Add 1lb of sliced mushrooms, 1 heaping Tbsp of minced Rosemary, and 1 tsp ground mustard.
Since this was first published, I have added 1Tbsp minced garlic…everything is better with garlic, right!
After the veggies are sautéed and gorgeous, Add 1/4 cup whole wheat flour and thoroughly toss, this allows the sauce to thicken. For gluten free, you can use a gluten free flour or corn starch.
Add 3/4cup chicken broth and 3/4cup milk (I used 2%)
Cook for about 10ish minutes to allow to thicken.
Oil your baking dish and place you pork chops in the prepared dish, I used about 1.5lbs of boneless pork chops.
Pour the mushroom sauce over the pork chops and cover completely.
Place dish in the 375degree oven and bake for 20-30mins depending on thickness of pork chops. Always make sure they are cooked to an internal temp of 145degrees. Food Safety friends!!

- 1 lb mushrooms
- 1Tbs minced rosemary(fresh) or 2 tsp dried rosemary
- 1tsp ground mustard
- ½ cup flour (reg or gluten free)
- ¾ cup chicken broth
- ¾ cup milk
- 1.5 lb boneless pork chops
- Sateed onions in olive oil with salt and pepper
- Add mushrooms and garlic and saute until tender.
- Add flour, rosemary, mustard and toss, then add the chicken broth and milk and cool on medium heat until sauce thickens
- Place pork chops into an oiled baking dish and cover with sauce.
- Bake at 375degrees for 20-30min, depending on the thickeness of pork chops.
