Spiced Pear and Raisin Chicken

I love making  savory dishes with fruit, both fresh fruit and dried fruit.  I think the sweetness of the fruit really balances out the flavors of a main dish.  Cooking with raisins is especially fun because they are versatile, nutritious and so darn delicious!  California Raisins come by their sweetness naturally. With California Raisins, the nutrition label tells a great story: Zero fat, no cholesterol and no added sugar. Plus, raisins offer 9% of your daily fiber and potassium, and 6% of your daily iron. (per quarter cup serving).  Their natural sweetness will give any dish an umph in the flavor area. This is also a simple, quick and easy meal that is perfect for those busy weeknights!

First add onions, yellow bell pepper, pear, garlic and raisins to your large skillet with about 2 Tbsp of Olive oil. Then add all your delish spices; cinnamon,ginger, nutneg and red pepper flakes .  Stir to cook and combine.

Add dicec chicken.  In this picture I used skinless chicken thighs because I got them on sale, but next time I will use chicken breast, it is less greasy and gristly. At this point I also added chicken broth, but forgot to take a picture.  Oops! 😉 Sorry!

Delish!  I served this over browned rice with some roasted vegetables on the side.  It was yummy and I dare say it was even better as leftover the next day!

The Pear and Raisins give this dish a wonderful mix of sweet and savory!
Ingredients
  • 1½ lb diced chicken breast (or skinless boneless chicken thighs if desired),
  • 1 Cup California Raisins
  • 2 Tbsp Olive oil
  • 1 Anjou Pear, diced
  • ½ cup onion, diced
  • 2 cloves garlic, diced
  • Salt and pepper to taste.
  • ½ cup yellow bell pepper, diced
  • 1 tsp paprika
  • ½ tsp ginger
  • 1tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp Red pepper flakes (more or less depending on preference)
  • 1 cup chicken broth
Instructions
  1. Add olive oil, onion, bell pepper pear, raisins, garlic and spices to hot skillet. Stir to combine and cook for about 5-10min on medium to saute.
  2. Add Diced chicken and stir to brown/cook. Add chicken broth. Allow to chicken to cook completely.
  3. Can be served over brown rice.
  4. Enjoy!
