Spiced Pork Roast with Potatoes

Like any crazed working mother of 3, there are  few things I love more than one pot cooking! Well, if I am being honest there are a few things I like more, like a delicious glass of vino on a friday nights, watching 2 year olds at a preschool Christmas program (especially when one of the kiddos picks their nose ), a good book, girls nights, someone else cleaning my bathrooms, gold bangles,  iced tea, quite time and mason jars.  But I still think one pot cooking is pretty awesome because of ease and low clean up! So although it doesn’t have the appeal of gold bangles, it’s still pretty great!

This is a super simple meal, just brown the roast, spice it up, add the potatoes and pop it in the oven.

Add you onions and olive oil to a large dutch oven.  Place your pork roast in the pot and season all sides with spice and salt and pepper, also brown on all sides. Add about 1 cup of chicken broth.

Next place quatered New potatoes and chopped celery into the pan with roast.  You can also add carrots at this point too.

Finally cover and cook in a 350degree overn for about 1 hour.  Check pork to make sure it is throughly cook (145degreeF internal temp)

Slice roast and serve with the delish potatoes.  And don’t forget the side salad or veggie!

Ingredients
  • 2-3lb Pork Roast
  • 2Tbsp Olive Oil
  • 1 Cup diced onion
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp dried mustard
  • 4-5 cloves of garlic, minced
  • Salt and Pepper
  • 1½ pound new potatoes washed and Quartered
  • 3 stalks of chopped celery
  • 1 cup Chicken Broth
Instructions
  1. Place olive oil and onions in large dutch oven.
  2. Mix together all the spices.
  3. Seaon Pork Roast with salt, pepper and spice mixture. Brown on all sides.
  4. Add chicken broth garlic, potatoes and celery. Season these with a little sea salt and pepper too.
  5. Cover with tight fitting lid and cook in 350 degree oven for about 1 hour, until roast is cooked through and potatoes are tender.
  6. Enjoy!
