Summer Squash with peppers

Summer squash like yellow crookneck squash and zucchini are some of my favorite vegetables.  They are delicious, versatile, and very healthy.  I always have a solid supply of squash in my vegetable drawer and this is one of my favorite go-to veggie side.

Summer Squash with Peppers

Ingredients
  • 2-3Tbsp olive oil
  • 1Large yellow squash (or 2 small), sliced
  • ¼ cup onion diced (I eye ball this)
  • 3-4 small sweet peppers chopped
  • ½ tsp. course sea Salt (or pinch)
  • ¼ tsp. fresh ground black pepper (or to taste)
  • 1tsp Herbs de Provence
Instructions
  1. Cut Squash in half, and then slice into ¼in-ish slices. Chop sweet peppers. Dice onions
  2. Add olive oil to large skillet.
  3. Add onions and peppers, toss to coat in oil. Add Salt and pepper and Herbs de Provence.
  4. Cook over medium heat until squash is tender, but still Al’dente tossing every few minutes to keep from sticking.
  5. Serve and Enjoy!
