The Menu

Monday: Baked Dijon Chicken Tenders with Roasted Broccoli and Cauliflower

Tuesday: Stove Top Mexican Black Beans and Rice with Spinach Side Salad

Wednesday: Pesto Shrimp with Vegetables over Linguine  From Nutrition Starring You  – I am excited about this one pot meal on a busy Wednesday Night!

Thursday: Black Bean, Avocado and Apple  with Cilantro Lime Salad Wraps from Simple Cravings Real Food.  Thursdays are especially busy for us.  We away from home at the gym, practices or meetings from 4ish in the afternoon and don’t get home until 7:45ish in the evening, so I am going to start bringing a picnic-style Dinner to have  in between activities. I am going to trying are the recipes to make the night before and have in the fridge to grab on my way out. Or in the Crockpot, that I can assemble really quickly before we head out the door.  Do any of you ever experience these types of nights?  I would love to hear what you do, please share in the comments below!

Friday: Turkey Burgers with Spinach Salad – or eat out….I haven’t felt much like cooking on fridays, so we may just grab pizza or something 🙂

Saturday:  Dinner with friends at our Monthly Supper Club (We take turns hosting and make the main dish and the other family brings the side or salad or dessert

Sunday: Fish Tacos with Roasted Broccoli
