The Menu

Monday: Thai Coconut Curry

Tuesday: Lemon Baked Fish  from Simply Delicious with Roasted Asparagus 

Wednesday: Pasta de Savoy  with roasted Brussels Sprouts

Thursday:  Southwestern Chicken Stew with Side salad (I will throw ingredients into a crockpot the night before, so I just turn it on the next day)

Friday:  Breakfast for Dinner;, Apple Chai Pancakes, scrambled eggs and cut up fruit

Saturday: Easy Peasy Tacos with carrots – Kids only, the adults are out to play at a Christmas Party 🙂

Sunday:  Roasted Vegetables over Polenta with Herb Cream Sauce

Helpful Links: When you find some kitchen items that you love, you just gotta to share!  Here are some links for some of the useful gadgets and products I am using this week!

Silicone Baking mats: I use these for baking, roasting and cooking EVERYTHING in the oven.  They keep the food from sticking to the dish so clean-up is a breeze and they are reusable, so no parchment paper or foil goes into the garbage. #green Used with all my roasted veggies and baked fish this week

Large Crockpot – If you don’t have a Large crockpot, you need to get one, like,  right now!  The Crockpot is a lifesaveer for me on busy week nights!  I especially love using it in the Spring and Winter with yummy soups and stews, like the Southwestern Chicken Stew above.

Electric Griddle: I love making my pancakes on an electric griddle, you can make a bunch at a time and the flat surface makes flipping easy and helps them remain round and pretty. 🙂 Love!  Bring on #BreakfastForDinner
