Monday: Roasted Vegetables over Polenta with Herb cream sauce 

Tuesday: One Pot Pad Thai with Roasted Cauliflower

Wednesday: Chicken Caesar Pitas made using Anytime Chicken; take chicken, toss with lots of baby spinach leaves and Store brought Ceasar Dressing (be careful not to go over-board with the dressing) and stuff into a Pita and supper is done!

Thursday: Taco Soup with Side Spinach Salad with Dijon Mustard Dressing found here

Friday:  Turkey Meatballs over pasta with my Marina Sauce

Saturday: 20 Minute Chicken and Spinach Parmesan from Momontimeout.com.  Yep, thats what I want!  looks great and is only 20 minutes! Yum, can’t wait to try it!

Sunday: Happy Valentines Everyone! We are kinda low-key Valentine’s Day people over here 🙂 I am making a simple meal here at home. This Pot Roast with Carrots and Potatoes from Little Spice Jar and a Side Salad and a dessert or two to make it special (still deciding on these…I’m not much of a baker remember ????)
