Here’s what’s  on The Menu for this week!

Summer is officially here!  Friday was my kids last day of school, so we have many hours of pool and water play in our near future!  We are going to have a pretty low key summer! We will be doing  some fun summery things around Austin and taking some weekend trips around Texas.

Tomorrow we are starting our 2nd week of the Joyful Warrior 30day Challenge, and I have been astounded and overwhelmed by our amazing Tribe of Joyful Warriors from all around the world!  I can’t believe the response and participation from these amazing women, who are supporting and loving each other through the challenge.  It is so inspiring and beautiful, my heart is like to burst (channelling my best southern belle).  Yes, we are 1 week in, but its not too late to join our us in the Love Fest!  I promise you will be overwhelmed by the joy and inspiration you will receive!  Check out the Joyful Warriors Facebook group for more information.

Monday: Salmon Burgers from Honest Cooking  and a Spinach salad with Champagne Vinaigrette

Tuesday: Cajun Black beans and Rice with Turkey Sausage with Fresh snap green beans (love summertime and fresh veggies)

Wednesday: Saucy Roasted Ratatouille over roasted Cauliflower, was given this tip by a friend, wanna try it!

Thursday: Shrimp Scampi with Roasted Broccoli

Friday: Date night!  Kids will be getting grilled cheese and apples slices with the babysitter

Saturday: Green Chilli Chicken Wraps – with corn tortillas or gluten free wraps (these are hard to find, I have only seen them twice at my local store…not sure if I feel like driving to a speciality store just for these 😉 ) Grilled Fresh Sweet Corn

Sunday: Baked Fish with Salt and Vinegar Smashed Potatoes with Steamed Peas and Carrots (I guess I am channeling our trip to London a few summers again 😉
