The Menu

Monday:  Deconstructed Eggplant Parmesan with Roasted Broccoli

Tuesday:  Tuscan Kale with Sausage and Pasta and a side Salad

Wednesday:  Southwestern Chicken Stew

Thursday:  Fish Tacos, made with my Cilantro Lime baked fish.

Friday: I am hosting a baby shower at my house on Saturday, so I know I will be in a getting ready frenzy, so something easy.  Maybe Pizza…that’s always a Friday night favorite :)

Saturday:  Breakfast for Dinner, Yay!  Chai Apple Pancakes with bacon and eggs and fruit on the side

Sunday:  Lemony Chicken with Asparagus on a bed of leafy greens

Don’t rob yourself of the Joy you would be having today, by reliving the past or fretting about the future.  The past done, it is what it is and the future will unfold in its own way whether you worry about it or not.  Focus on the present, today because that is the place where you can take action, find joy, and create happiness that expands into the future. Salmon Cobb Salad

I am a sucker for a Cobb salad! I absolutely love the combination of fresh greens, crispy bacon, creamy cheese (especially if it’s blue cheese
