I don’t know about you, but I think meatballs are pretty fantastic! Ok, I know that sounds a little weird, just go with it and let’s pretend that its a normal thing to say. 🙂 The reason I love meatballs so much is because they are so versatile and my kiddos and husband love them. I mean, meatballs are just kinda fun to eat! I like this simple meatball recipe, because unlike my equally delicious Apple Cheddar Turkey Meatballs, these have a very simple flavor profile, so they go with a lot of different meals. They are great because you can have them over pasta, in soup or on a sub…to name just a few.
Only thing I don’t like about meatballs is that they are a little labor intensive to make, so I solve this problem by making a bunch at one time and freezing them. This is a single recipe, but it can be doubled or tripled as needed. I normally triple it, I figure if you are making some, you might as well make a bunch.

- 1 lb ground turkey
- 2 tsp Italian seasoning mix
- ½ cup onions, diced
- 2 cloves of garlic minced
- 1 egg
- ½ cup oatmeal (for celiac used certified gluten free oats)
- 2Tbsp chicken broth
- Pinch of Coarse Sea Salt
- Generous Ground pepper
- Combine all ingredients in a large bowl and mix together using hands on a large spoon
- Using a small scooper or spoon, form uniform meatballs and place on a lined baking sheet
- Bake at 400 degrees for 15-20min depending on the size of the meatball (the bigger the longer the cooking time.
