I think breakfast is the most important meal of the day! And this is a breakfast of champions! Oatmeal is a great source of fiber and micronutrients, such as manganese, magnesium, biotin and phosphorus. Plus it tastes good and can be made in sooooooo many ways.
Here is a quick, easy, hearty, nutrient packed, ready to conquer the world recipe for oatmeal that you can make in 10 minutes or even the night before (and reheated) to start your day off right. Parents and caregivers, I know school mornings are hectic, but make sure your little pupils have something nutritious in their tummies before heading off to school in the morning. Many many studies show the positive impact of eating breakfast on your child’s learning capacity, behavior and weight status. A good breakfast every morning will help them thrive!
Here I have 1 1/2 cups of Oat fashioned Oats, don’t use the quick cooking stuff, it is over processed and really doesn’t cook that much faster. 1tsp ground cinnamon, 2Tbsp brown sugar (this was a little too sweet so the next time I added only just use ~1 Tbsp and it was great), this makes 4+servings, so don’t be too upset about the sugar because this only gives 1.5tsp/serving. Also add 1 1/2 tsp vanilla extract, 1 cup frozen blueberries and a dash of course sea salt (brings all the flavors together)
Add 2 1/2 cups of milk, I used organic soy milk (has protein and lots of phytonutrients) but you can use whichever milk you prefer. Cook on low-medium for about 5 minutes
Turn off heat and let sit for about 2 more minutes. I always need to add a little water at the end to get a consistency my family likes. About 1/4-1/2cup, but eyeball this.
I cut up bananas to stir into it and sprinkled some nuts and seeds on the top for an added nutritional kick and great texture, but this isn’t necessary because it is yummy just the way it is!
Enjoy! Now go conquer your day!
