Weekly Menu: April 13 – 19

Happy Sunday everyone!  We have a pretty typical week over here in the Twellman house, which is always nice.  🙂

Ask anyone who knows me, I love meaningful quotes. I read one this week that I thought was pretty great!

Weekly Meal Planning. 

Monday: Fish Tacos with Roasted Cabbage – using my cilantro lime baked fish on Corn tortillas.  With spinach salad on the side.

Tuesday: Hashbrown Spinach Tomato Pie – this looks like a good gluten free alternative to my beloved Quiche 🙂 I will try it first with the store bought hashbrowns, but I once I get a feel for how it cooks, I may try to make my own hashbrowns.

Wednesday: Roasted Vegetable Ratatouille with Quinoa

Thursday: Turkey Fajitas with Sriracha Lime Brussels Sprouts

Friday: Friday Night is Pizza night!  I am going to play around with some gluten free crusts, using this recipe as a guide.  I will have some cut up fruits and vegetables on the side for munching.

Saturday: Open Faced Turkey Burgers with cucumber salad and baked sweet potatoes

Sunday: Spiced Pear and Raisin Chicken with Roasted Broccoli and Cauliflower
