Happy Sunday everyone!  This weekend has been too short andMonday  is just a few short hours away!  Yikes!  Oh well, C’est la vie, tomorrow will always come, might as well make it great!  So create a great week my friends!

Monday: Black bean and Spinach Green Chili Enchiladas, I have a recipe in my head that I want to try, but it will similar to this one.  I will post it in the next few weeks 🙂

Tuesday: Roasted Chickpea and  Veggie Brown Rice Bowl with Shrimp – I had this on my menu a few weeks ago and wasn’t able to make it, so I am putting it back on this week because it’s still on mind!

Wednesday: Baked Fish with Salt and Vinegar smashed potatoes and roasted broccoli

Thursday: Taco Soup – double batch to freeze for later

Friday:  Mini Corndogs (GF style) and cut up fruit and vegetables. Piper picked the meal tonight because turns 3 today.  Happy Birthday to my baby girl!  Time flies, I can’t believe she is three already!

Saturday: Eating Out – Takin’ the night off!
