Monday: Korean Beef Quinoa Bowl  by Smilesanwich.com

Tuesday: Pasta de Savoy (GF pasta) with Anytime chicken Chicken with Roasted Broccoli and Cauliflower

Wednesday: Crockpot Quinoa Chicken Primavera – by Pinch of Yum.  This recipe pinned our Joyful Warrior Tasty Tuesday Pinterest board, by one of the warriors.  I saw it and I know I had to try it…plus they had  me at crockpot!

Thursday: Salisbury Steak Mini Style with Roasted Asparagus – Thursdays are a little less crazy for us now that we dropped soccer (Piper refused to play, and I decided that the “once you make a commitment…” lesson would be lost on a 4yo) but for my sanities sake, I will still make this on Sunday and have it ready to go in the fridge!

Friday:  Pear and Gorgonzola Salad with Soft boiled eggs and Chickpeas (for Protein) – Something easy for Friday night…My son will complain about salad for

Saturday: Vegetable Quesadilla with sliced avocado (of course!)

Sunday:   Happy Mother’s Day to all the momma’s out there!  I will be haveing brunch with my Momma (because I love brunch!) so here delicious brunch guide I found. For dinner tonight, we will be having Ole Shepard’s Pie made by my hubby 🙂
