The Weekly Menu: April 25 – May 1

Monday:  Turkey Fajitas  with Spinach salad with Avocados

Tuesday: Taco Soup – in Crockpot.

Wednesday: Shrimp Scampi, minus the pasta just over  lots o’ Roasted cauliflower 

Thursday:  Roasted Vegetables over Polenta 

Friday: Pad Thai  with fresh cut up veggies on the side

Saturday:  Breakfast for Dinner – with Chai Pancake, bacon, eggs and cut fresh fruit

Sunday:  Turkey Burgers on the grill with roasted potatoes and corn – Seems like the perfect May Day meal!

Breath let it go and remind yourself that this very moment

The best stuff happens now, in this moment. Cherish it.  It’s wonderful to have goals and dreams for the future, but don’t let the achievements of tomorrow, rob you of the joy of today! Sometimes, I can be too forward thinking, so I have to take regular gratitude breaks during my day.

We  have no control over what happens tomorrow, but we have total control over how we experience today.

Salmon Cobb Salad

I am a sucker for a Cobb salad! I absolutely love the combination of fresh greens, crispy bacon, creamy cheese (especially if it’s blue cheese
