Weekly Menu Planning Spring Flowers

Oh man, I woke up this morning feeling a flustered!  My todo list on the top of  my mind and I was getting stressed.  Not a great way to start my morning or week for that matter.  My to-do list kinda felt like a frenzied cloud in my mind.  And I know that before I could productively organize and prioritize it,  I had to get my mind right, so I went for a quick run before my husband left for his bike race this morning.  I came back with a clearer head and heart.  Don’t get me wrong, I didn’t figure it all out in my 30minute run, but I felt much clearer and less frenzied.  I reconnected with the trust I have in myself and the universe that everything that needs to be done will get done.

 I have the choice to be joyful during my week regardless of my to-do list.  

So I will prioritize my time this week to make sure I can accomplish my goals and to-dos, but most importantly keep in mind my ultimate goal of maintaining a happy, healthy and joyful world for myself and my family.  This won’t be easy, because it’s easy to get overwhelmed with a lot on your plate, but I will do the things I know support my spirit and peace of mind; daily meditation, at least 30min of physical activity every day and eating healthy…oh and coffee. 😉  It’s nothing extravagant.  I am only dedicating a minimum of 35minutes to myself every day, but it’s very important to ensure that my personal coffers stay  full.This is not a formula that works for everyone, but its is a strategy that works for me (at this moment 😉 ).

Also,  I am going to simplify our meals this week to lessen the evening stress. So everything on my menu is either a crockpot meal or something that is quick and simple and that I have made a million times before. 

 

Monday:  Spaghetti with meat sauce (using my Red Sauce) with roasted Broccoli and Cauliflower – Making sauce Sunday in CP

Tuesday: Turkey Fajitas  with Spinach salad with Avocados – will prep the veggies to just pour into the pot to cook with the Turkey.

Wednesday: Shrimp Scampi with Roasted Broccoli – yes I know same veggie as Monday, but it’s easy and delish

Thursday: Taco Soup – in CP.  Going to cook beef  Sunday so all I have to do is add everything to the CP Thursday morning.  I am going to the Austin Mom’s Blog Mom’s Night Out tonight!  It will be so fun, but I still need to figure out my Derby hat…

Friday: Pad Thai  with fresh cut up veggies on the side

Saturday:  Breakfast for Dinner – Piper’s birthday party is today and I am not ready at all (breathing…it will all get done, it will all get done…).

Sunday: Grilled Chicken (similar spices to this) with Grilled Veggies (hubby is in charge of grilling today)  and roasted potatoes.  I will be preparing with a segment I was asked to do on a local morning news program.  I would love it if you could Tune in to Good Day Austin Monday morning to watch me make Overnight Oats on the Make it Monday segment.  I am really excited and I would love your support and good energy!
