Hello Everyone, welcome to a new week!

I hope you have had a wonderful December so far!  I can say ours’ (is ours’ grammar correct, not sure what to do with this 😉 )  has been full and fun, and with all the Holiday festivities, time really flies this time of year. Because time is slipping through our fingers at warp speed, I always try to make a conscience effort to really enjoy all the merriment and not let the hecticness overwhelm us (this is not always easy to do). Life is too short and  too sweet, and  it be “next year” before we know it!  Although, I am actually really excited about 2015, because I have a feeling it will be a pretty stellar year,  I am committed to absorbing up all the joy and love that 2014 has left for us!  So with that in mind, my menu this week is full of quick and simple meals!

Monday:  Shrimp Scampi with Roasted Broccoli – Didn’t have this last week for some reason, so I have all the fixins, so its on the menu again this week 🙂

Tuesday: Greek Turkey burger with Cucumber Raisin Salad

Wednesday: Smothered Pork Chops over rice with a Spinach Salad – I will make this on Tuesday night and put it in the crockpot to slow cook through out the day for a super easy dinner.

Thursday: Creamy Lemon and Basil Chicken with Roasted Asparagus

Friday: Christmas Party – Festivities and no cooking or clean up- YAY!

Saturday: Deconstructed Eggplant Parmesan with Side Salad – its saturday night, so the veggie is just a simple bagged salad

Sunday: Chicken Soup with Dumplings.  Brussel Sprouts and Kale Salad  – This will be easy to throw together and have cooking in the crockpot so an easy dinner.
