Weekly Menu: February 16 – 22

Weekly Menu Planning

Hello! Welcome to another Sunday! It’s been a beautiful, sunny, warm weekend here in Austin, so we were trying to squeeze outside fun before it gets cold again! Yesterday with Valentine’s Day, it was nice, we spent it together as a family. It was really low-key,  I made Salmon, roasted vegetables, for the hubs and I,  these mini corn dogs(with gluten free batter)  for the kiddos   and for dessert,  Panna Cotta, and Chocolate Covered Strawberries.  Oh, and we watched StarWars.   Yep, that’s how we roll, it was fun! 😉

I would love to hear about what did you do for Valentine’s Day?  Please share in the comments below!

Create a fantastic week my friends!!!

Monday: Shrimp Scampi with Roasted Broccoli and Cauliflower

Tuesday:  Hawaiian Turkey Burger with Spinach Salad – New recipe, found here.  Looks delicious and super quick and easy for a weekday evening

Wednesday: Creamy Lemon Chicken  and Roasted Asparagus

Thursday::  Apple and Cheddar Turkey Mini-MeatLoaves with Salt and Vinegar Smashed Potatoes with Steamed Peas and Carrots.

Friday: By the Seat of our Pants – We have a kiddo bday party and I will be getting ready for our birthday Party tomorrow 🙂

Saturday:  Happy Birthday to Me!  Today is my birthday and because I am 35 and it’s a Saturday, we decided to have a small party with some of our best friends!   We are having Small Bites and Beverages, and because I don’t want to do all the cooking on my birthday, I asked my friends to help with the food too. So they are bringing their favorite Small Bites and Beverages to share too.  🙂

Sunday:  Happy Birthday to Andy!  It’s my husband’s birthday so we will be having his favorite meal! Burgers with French fries and Chocolate Brownies  for dessert.
