Weekly Menu Planning - FEb

Hello February, so glad you are here! I have this month,  it’s a pretty big month over here, what with my birthday and my husband’s birthday, Valentine’s day, Mardi Gras and Heart Health month…it’s going to be fun and fabulous!  Because of Valentine’s day , February has come to symbolises love and romance and while  I am actually not a huge fan of valentines day per se, I love any excuse for expressing love and eating chocolate covered strawberries!

Monday: Southern Shrimp Quinoa (didn’t have it last week, so I am bumping it to this week, recipe inspiration here)

Tuesday: Baked Lemon Salmon with Creamy Dill sauce (recipe here)  and Roasted Asparagus

Wednesday: One Pot Pad Thai with Side Spinach Salad

Thursday:  Good Ole Shepherd’s Pie (made with ground turkey) and steamed broccoli

Friday: Pear and Gorgonzola Spinach Salad with Champagne Vinaigrette. With Grilled Chicken on the Side

Saturday: Open Faced Cheese Hamburgers with Roasted Cauliflower 

Sunday: Widow’s Soup. A wonderful reader shared this Maltese recipe with me…I can’t wait to try it!  Thanks Angela!

Salmon Cobb Salad

I am a sucker for a Cobb salad! I absolutely love the combination of fresh greens, crispy bacon, creamy cheese (especially if it’s blue cheese
