Hello! Thanks for stopping by.  This is going to be a pretty standard week over here, fun and full as always. 🙂

 

Monday: Italian Chicken with Gnocchi bake, made with my Red Sauce 

Tuesday: One Pot Pad Thai with Roasted Cauliflower

Wednesday: Saucy Roasted Vegetable Ratatouille – if you haven’t check out this recipe yet, it’s great and so easy!  Great weeknight meal. You can even pre prep all the veggies the night before, while making dinner.

Thursday: Taco Soup with Side Spinach Salad with Dijon Mustard Dressing found here

Friday: One Pot Mexican Stir Fry.  Inspiration found here

Saturday: Happy Valentine’s Day!!!  I am making dinner for my loves at home.  

What’s on the Menu

For Andy and myself: Lemon Garlic Baked Salmon with creamy dill sauce (inspiration here) with Roasted Asparagus. -Recipes will be on the blog this week

For the Kids (one of their favs): Mini Corn Dog Muffins found here (with gluten free batter) with Roasted Cauliflower

For dessert: Panna Cotta and Chocolate covered Strawberries  

 

Sunday: Pork Tacos in CP with Roasted Vegetables (whatever we have still in the fridge 😉 )
